Jicama, Mango and Cucumber Salad


mango_salad-291x437If you’ve visited Mexico, you’ve probably seen street vendors selling jicama and fruit sprinkled with lime and chile. Here’s a recipe that will take you back to that experience.

Ingredients

1 lime

2 ripe small mangos, peeled and cut into cubes or strips

1 medium cucumber, peeled and cut into cubes or strips

1 medium jicama, peeled and cut into cubes or strips

A dash of Pico De Gallo Seasoning or another Chile Powder of your choice

Salt to Taste

Directions

In a mixing bowl, combine the mango, jicama, cucumbers, Pico De Gallo Seasoning (Or Chile Powder), lime juice, chile powder, and salt. Toss well, cover and refrigerate for at least 1 hour before serving.
